Kempinski Hotel Grand Arena Bansko’s Come Prima Restaurant launches White Truffle Menu

Bansko, 24 October 2013: – Chef Francesco Calore will surprise gourmands with a new Italian culinary temptation – a delicious white truffle menu. From 22 to 30 November 2013, guests are invited to explore a mix of dishes featuring the world’s most expensive ingredient at Kempinski Hotel Grand Arena Bansko’s Come Prima Restaurant, the only venue in the region offering white truffles.
 
"I am Italian and know that this time of the year white truffles are at their peak,” commented Calore, Executive Chef at Kempinski Hotel Grand Arena Bansko. “This time of year, chefs are waiting impatiently. I am obsessed with the aroma and taste of white truffles and believe they are a gastronomic phenomenon. I think everyone should taste them at least once in their life and I am elated that our team will provide guests with that opportunity.”
 
The best white truffles come from Italy’s Piedmont region, particularly around the town of Alba. They appear only from mid-October to end-December. Truffles are hard to find and cannot be cultivated. Most truffle hunters use trained dogs to sniff them out from where they lie buried next to tree roots. Truffles are characterised by a very intense smell that develops only after maturation.
 
The affordably priced menu will offer everything from exciting appetisers and pasta to meat dishes and a sinful dessert. Appetisers include, White Alba Truffle Fondue and Alba Beef Carpaccio. For the main courses, guests will choose from Parmesan Risotto with fresh White Truffle, Tagliatelle all’albese, Truffled Eggs and Veal Escalope with White Truffle.  The new dessert experience will include Vanilla Ice Cream with White Truffle. The menu may also be paired with Barolo and Barbaresco Italian wines.
